Join Dietrich and Andrea of Edible Alchemy to start the spring with a fresh medical arsenal: what you put into your body! Oils, seeds and nuts, grains, spices, herbs, fruits and vegetables, probiotics-- these are the building blocks of human health. The chemistry of what we drink, taste, smell, touch, and breathe all have verifiable effects on the human system. Learn some of the mechanisms at work and how to tap into the body's innate knowledge. It's well known that a full, round, balanced diet is the strongest preventative medicine available. We will share some properties of common and useful kitchen items and how to skillfully apply them in your own cooking.

Cost of workshop includes ingredients for food and drinks.

We'll learn from a sample of international medicinal traditions, including Ayurveda, cooking for your Doshas, and the value of seasonal eating. Then we'll focus on local, Midwest and Illinois plants and foods. Finally, we will talk about nutrition and healthy eating solutions for the modern urban dweller on the go. We will exhibit the ease of transforming your garden and kitchen into a modern apothecary. Sample and taste some whole food remedies as we demonstrate your kitchen's potential!

Dietrich & Andrea Mattson-McGaffey are co-founders and co-ordinators of Edible Alchemy. EA is Chicago's local-source, sustainable & organic foods project, catering and workshop center based at their community center & rooftop garden in Pilsen. They are passionate about teaching the value of human connections to food, about self-sustainability, local foods and the transformative power of communities gathering to share stories and a meal.
